Our focus is on quality, making everything from scratch and sourcing local seasonal ingredients as much as possible.
You’ll find the best rye and spelt flours not only in our bread but also in our sweet goods and we try to use Manuka honey, date syrups and less refined sugars where possible.
Why is our sourdough so good? Because the process takes over 30 hours. Starting with the first ferment, through to bulk fermenting, hand shaping and a final overnight rest before baking which starts at 4am in the morning.
